Brownies, but make them s’mores.

We still had some Easter eggs left and I wanted rid of them – so make some summer themed brownies!

Please do not be fooled by the remainder of easter choc in the house. It is certainly not because they never eat chocolate FAR FROM IT 😬 it’s just the shit chocolate, left over from an Easter egg hunt that even they don’t want 🤣

Waste not, want not – whack it in a brownie!

This recipe NEVER lets me down. This time I added chopped digestive biscuits to the mix and topped with more biscuits, marshmallow fluff and choc chips – success!

You need-

185g butter (I used @iomcreamery )
200g mixed chocolate (to melt)
300g chopped chocolate to add to the mix
86g plain flour
40g cocoa powder
3 large eggs
225g caster sugar
6 digestive biscuits, broken up
For the topping –

4 tbsp marshmallow fluff
4 digestive biscuits
chocolate chips
Preheat oven to 180c (160c fan) and Line 2 8’’ cakes tins with baking paper
Put the butter in a bowl with the 200g of choc and melt over a pan of boiling water and put to one side to cool
Add the eggs and caster sugar to a mixing bowl and using an electric whisk or a mixer whisk until the volume doubles in size and goes pale and creamy (takes about 3-5 mins)
Pour the melted choc and butter over the egg and sugar and stir using a plastic spatula using a figure of 8 action to slowly mix together (try and keep all the air in the mix)
Sieve in the flour and cocoa powder into the wet mix until combined and then the choc pieces and 6 digestives
Pour the mix into the lined baking tins
2 tbsp marshmallow fluff, 2 broken digestives and a handful of choc chips to each tin
Bake for 30 mins.
If it still wobbles when you bring it out then pop it in for a further couple of minutes and then a further couple more if it still wobbles. I like a little wobble coz it leaves you a sqidgy middle 🤣
Leave to cool in the tray and then add the melted chocolate the toppings of your choice! Icing or icing sugar or melted choc
