Easy vegan banana bread and jam.

If you’re not all banana bread’d out from lockdown 1, then this recipe is perfect for –
.
️A tasty, easy vegan breakfast

️Using up leftovers

️An activity with the kids
.
This recipe uses up stuff you’ll already have in your cupboards and is perfect for using up bits of left over fruit and black bananas.

You need –
.
4 medium spotty, black bananas (3 for the mix, 1 for the top)
.
75ml vegetable oil
.
100g brown sugar
.
225g plain flour
.
3 heaped tsp baking powder
.
3 tsp cinnamon
.
Loaf tin lined with baking paper
.
For the jam –
.
3 handfuls of leftover fruit (I used blueberries, raspberries and blackberries)
.
1 tsp water
.
1 tbsp maple syrup
.
Make the loaf –
.
Heat oven to 200C.
.
Mash 3 bananas with a fork, then mix well with oil and sugar.
.
Add the flour, baking powder and cinnamon and combine well.
.
Add mix to the loaf tin and top with the last banana, sliced lengthways and sprinkle with some more sugar and cinnamon.
.
Bake for 20 minutes. Check and cover with foil if the cake is browning, then bake for a further 20 mins until a skewer comes out clean.

While cake is baking add the fruit, water and syrup to a pan and simmer for 10 mins, mashing the fruit together, and stirring until thickened.
.
Add to a jam jar and set aside.
.
Remove cake from oven when done and allow to cool.
.
Serve with vegan butter and jam straight away or toast the following days 🏻
