Sheet pan teriyaki chicken and veg.
Sheet pan meals are my absolute fave. Minimal mess and super quick and easy 🏻
I was scrolling through Pinterest for some inspo and came across @justataste ‘s sheet pan teriyaki chicken. It is great!! I also used her teriyaki sauce recipe, but you can use shop bought if you prefer.
I’ll swipe up to the original recipe in stories so that you can make her sauce too if you like.
You need –
4 chicken breasts, sliced into 1 inch strips
1 red bell pepper, cut into 1 inch strips
2 medium carrots, peeled and sliced into ribbons, 1 inch length
1 head broccoli, chopped into florets
2 handfuls sugar snap peas
10 baby corn, sliced in half lengthways
1 1/2 Tablespoons olive oil
1/2 cup homemade or store-bought teriyaki sauce
Sesame seeds, for serving
Rice or noodles, for serving
Preheat oven to 205c.
In a bowl, add the mixed veg and toss with the oil and some salt and pepper.
Add to a baking paper lined sheet pan, spread out with minimal overlapping.
Add the chicken and sauce to the bowl and mix to combine. Add to the veggies, spread out well again.
Bake for 20-25 minutes until the chicken is cooked through and veggies are tender.
Sprinkle with sesame seeds and serve with rice or noodles.
